The Roof offers a range of adult beverages and upscale bar food. Think small plates, flatbreads and desserts, all pleasantly paired with a view of Columbia from above. The venue just came out with its spring cocktail menu, which includes classics such as Pimm’s Cups alongside craft mixed drinks created specifically for the lounge.
The Brazilian Bee, a popular springtime beverage, is an innovative take on the classic martini. Pear liqueur and honey balance out the harder taste of Brazilian cachaça and Nonino Amaro, while egg white adds froth and a whole new layer of texture.
Leblon Cachaça (a distilled spirit made from sugarcane juice)
Spiced pear liqueur
Cinnamon (for garnish)
Mix the egg white, simple syrup, liqueur, Amaro and Cachaça with a splash of lime juice and dry shake to maintain the frothiness of the egg white. Strain over ice into a martini glass and garnish the drink with a swirl of honey and sprinkle of cinnamon.
